Honey Hexmas Recipes ~ Epic Pumpkin Cranberry Muffins!


One of my FAVORITE things about fall is that everything has pumpkin in it. Coffee has pumpkin in it. Ice cream has pumpkin in it. Even squash has pumpkin in it! Or... something. Soups and stews. You get my point. But my go-to use for pumpkin once Hexmas rolls around is in baking, like cookies, cupcakes, and today's Honey Hexmas Recipe, Epic Pumpkin Cranberry Muffins!

The Revenge Honey's Epic Hexmas Pumpkin Cranberry Muffins
Ingredients:

2 cups all-purpose flour

3/4 cup brown sugar, packed

2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon

1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1 cup canned unsweetened pumpkin puree

2 eggs, lightly beaten
1/2 cup butter, melted

1/4 cup buttermilk (if you want to go healthy, sub almond milk or skim, but skim will change the consistency)
1/2 teaspoon honey
2 teaspoons vanilla extract

1 cup dried, sweetened cranberries (or for something a little sweeter, you can substitute dried cherries!)
1/3 cup roasted pumpkin seeds

*Note: If you don’t have all the spices, or are low on funds, pumpkin pie spice is a great alternative to purchasing all of the ones mentioned. Just add 1 and 1/2 teaspoons of PPS to your recipe!

Instructions:
1) Pre-heat your oven to 400 degrees F or 200 degrees C. While the oven heats, spray muffin trays with non-stick cooking spray or line the trays with paper.

2) Mix together your "dry" ingredients: spices, sugar, flour, baking powder, baking soda, & salt, in a mixing bowl.

3) Beat pumpkin puree, butter, vanilla, eggs, and milk together until mixed. VERY slowly add the dry ingredients (the speed at which you mix wet and dry ingredients makes all the difference in the consistency of your finished product!). 

4) Now gently fold in cranberries and pumpkin seeds until mixed through. Fill each muffin cup about 3/4 of the way up.

5) Bake in the oven for 20-25 minutes, until a toothpick down the center of a muffin comes out clean. Let cool before removing from the muffin tin!

Follow the instructions and you should have some perfect pumpkin muffins for a Hexmas morning! But remember, if you mess up...
